What are IA deliverables?
The list below is a typical - minimum - suite of deliverables that an IA might be expected to produce during the course of a project:

Sometimes a project may require that there are (many) more; less often (hopefully) there will be less - and by all mneans compare it to the larger set that constitutes the wider UCD deliverables suite).

Irrespective of that, wireframes and taxonomy are always at the core of a good IA solution.

These deliverables are arranged in (rough) chronological order, i.e. the order in which the deliverables might reasonably be expected to appear during a project lifecycle. Remember though that these deliverables are part of an IA "toolkit", not the outcomes of a rigidly constrained waterfall methodology. The choice of which deliverable will be produced when will depend heavily on the nature and requirements of the project, and the way it's being run.

Resources
There are lots of sites devoted to IA, and lots of books on the subject too. Some even have something interesting and novel to say.
